Ingredients

  • Milk - 250 ml
  • Eggs - 2 large
  • All-purpose flour - 100 g
  • Salt - 1/4 tsp
  • Butter - 20 g (melted)
  • Ricotta cheese - 250 g
  • Honey - 2 tbsp
  • Vanilla extract - 1 tsp
  • Fresh berries (strawberries, blueberries) - 150 g
  • Powdered sugar - for dusting

Steps

  1. In a mixing bowl, whisk together the milk, eggs, flour, and salt until smooth. Stir in the melted butter and let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter into the skillet, swirling it to form a thin layer. Cook for 1-2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for another minute. Repeat with the remaining batter.
  3. In a separate bowl, combine the ricotta cheese, honey, and vanilla extract. Mix until well combined and creamy.
  4. To assemble, place a crepe on a plate, add 2-3 tablespoons of the ricotta mixture in the center, and fold the crepe over. Repeat with the remaining crepes.
  5. Serve the stuffed crepes topped with fresh berries and a dusting of powdered sugar.
