- Ricotta cheese - 250 g
- Honey - 2 tbsp
- Vanilla extract - 1 tsp
- Fresh berries (strawberries, blueberries) - 150 g
- Powdered sugar - for dusting
Steps
- In a mixing bowl, whisk together the milk, eggs, flour, and salt until smooth. Stir in the melted butter and let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter into the skillet, swirling it to form a thin layer. Cook for 1-2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for another minute. Repeat with the remaining batter.
- In a separate bowl, combine the ricotta cheese, honey, and vanilla extract. Mix until well combined and creamy.
- To assemble, place a crepe on a plate, add 2-3 tablespoons of the ricotta mixture in the center, and fold the crepe over. Repeat with the remaining crepes.
