Ingredients

  • Riced cauliflower - 400 grams
  • Firm tofu - 200 grams, cubed
  • Eggs - 2 large
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Peanuts - 30 grams, crushed
  • Soy sauce - 3 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro - 15 grams, chopped
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Red pepper flakes - 1 teaspoon (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat and add the cubed tofu. Cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add garlic and sauté for 30 seconds until fragrant. Add bell pepper and carrot; cook for another 3-4 minutes until softened.
  3. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until just cooked, then mix them with the vegetables.
  4. Add the riced cauliflower to the skillet, along with the cooked tofu, soy sauce, fish sauce, lime juice, and sesame oil. Stir well to combine and cook for an additional 5-7 minutes until the cauliflower is tender but not mushy.
  5. Remove from heat and stir in the chopped green onions, cilantro, and crushed peanuts. If desired, sprinkle with red pepper flakes for added heat.
  6. Serve hot, garnished with extra cilantro and lime wedges on the side.
