Ingredients

  • Broccoli florets - 300 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1/4 cup, finely chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 2 tablespoons, grated

Steps

  1. Rinse the broccoli florets under cold water and remove any tough stems.
  2. Using a food processor, pulse the broccoli florets until they resemble rice grains. Be careful not to over-process.

  4. Add the riced broccoli to the skillet, along with salt and black pepper. Stir well and cook for about 5-7 minutes, or until the broccoli is tender but still bright green.
  5. Remove the skillet from heat and stir in the lemon juice and grated Parmesan cheese until well combined.
  6. Serve warm as a side dish.
