Ingredients

  • Basmati rice - 1 cup
  • Fresh spinach - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 2 cups
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 2 tablespoons, grated (optional)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat olive oil over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the rinsed rice to the saucepan and toast it in the oil and garlic for about 2-3 minutes, stirring frequently.
  4. Pour in the vegetable broth, add salt and black pepper, and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes.
  5. While the rice is cooking, wash and roughly chop the fresh spinach.
  6. After 15 minutes, remove the lid from the rice and add the chopped spinach and lemon juice, stirring gently to combine.
  7. Cover the pot again and let it cook for an additional 5 minutes on low heat until the spinach is wilted and the rice is tender.
  8. Remove from heat, fluff the rice with a fork, and if desired, sprinkle with grated Parmesan before serving.
