- Basmati rice - 1 cup
- Fresh spinach - 200 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 2 tablespoons, grated (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat olive oil over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.
- Add the rinsed rice to the saucepan and toast it in the oil and garlic for about 2-3 minutes, stirring frequently.
- Pour in the vegetable broth, add salt and black pepper, and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes.
- While the rice is cooking, wash and roughly chop the fresh spinach.
- After 15 minutes, remove the lid from the rice and add the chopped spinach and lemon juice, stirring gently to combine.
- Cover the pot again and let it cook for an additional 5 minutes on low heat until the spinach is wilted and the rice is tender.
- Remove from heat, fluff the rice with a fork, and if desired, sprinkle with grated Parmesan before serving.
