- Water - 2 cups
- Raisins - 1/2 cup
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the rinsed rice, cinnamon, salt, and black pepper, cooking for about 2 minutes to toast the rice slightly.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes.
- After 15 minutes, remove the saucepan from heat and add the raisins. Let it sit, covered, for another 5 minutes to allow the raisins to plump up.
- Fluff the rice with a fork, then garnish with chopped parsley before serving.
