  • Water - 2 cups
  • Raisins - 1/2 cup
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the rinsed rice, cinnamon, salt, and black pepper, cooking for about 2 minutes to toast the rice slightly.
  5. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes.
  6. After 15 minutes, remove the saucepan from heat and add the raisins. Let it sit, covered, for another 5 minutes to allow the raisins to plump up.
  7. Fluff the rice with a fork, then garnish with chopped parsley before serving.
