  • Frozen green peas - 1/2 cup
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the rice, salt, and black pepper, cooking for 2-3 minutes to lightly toast the rice.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  5. After 15 minutes, add the frozen peas to the rice. Cover and cook for an additional 5 minutes until the rice is tender and the peas are heated through.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped parsley before serving.
