  • Long-grain white rice - 1 cup
  • Green or brown lentils - 1/2 cup
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
  3. Add the minced garlic, cumin, paprika, salt, and pepper to the pot, and cook for another 1-2 minutes until fragrant.
  4. Stir in the rinsed lentils and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  5. After 15 minutes, add the rice to the pot, stir well, and cover again. Cook for an additional 15-18 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  6. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork before serving.
  7. Garnish with chopped parsley and serve warm.
