- Long-grain white rice - 1 cup
- Green or brown lentils - 1/2 cup
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 2 cups
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
- Add the minced garlic, cumin, paprika, salt, and pepper to the pot, and cook for another 1-2 minutes until fragrant.
- Stir in the rinsed lentils and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the rice to the pot, stir well, and cover again. Cook for an additional 15-18 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork before serving.
- Garnish with chopped parsley and serve warm.
