- Fennel bulb - 1 medium (about 200g), finely chopped
- Olive oil - 2 tablespoons (30ml)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups (480ml)
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Rinse the rice under cold water until the water runs clear to remove excess starch, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and chopped fennel to the saucepan, cooking for an additional 3-4 minutes until the fennel softens.
- Stir in the rinsed rice, allowing it to toast lightly for 1-2 minutes, stirring constantly.
- Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the fresh parsley before serving.
