Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté for about 3-4 minutes until the onion becomes translucent.
  4. Stir in the minced garlic and diced carrots, cooking for another 3-4 minutes until the carrots begin to soften.
