Ingredients

  • Long-grain white rice - 1 cup
  • Broccoli florets - 2 cups
  • Vegetable broth - 2 cups
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 1/4 cup, grated (optional, for serving)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).
  2. Add the rice to the saucepan, stirring it for about 2 minutes to lightly toast it.
  3. Pour in the vegetable broth and add the salt and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes.
  4. While the rice is cooking, steam the broccoli florets until they are bright green and tender, about 5-7 minutes.
  5. Once the rice has absorbed all the liquid and is tender, remove it from the heat and let it sit covered for an additional 5 minutes.
  6. Fluff the rice with a fork, then gently fold in the steamed broccoli and lemon juice.
  7. Serve warm, topped with grated Parmesan cheese if desired.
