Ingredients
- Long-grain white rice - 1 cup
- Broccoli florets - 2 cups
- Vegetable broth - 2 cups
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Parmesan cheese - 1/4 cup, grated (optional, for serving)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).
- Add the rice to the saucepan, stirring it for about 2 minutes to lightly toast it.
- Pour in the vegetable broth and add the salt and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes.
- While the rice is cooking, steam the broccoli florets until they are bright green and tender, about 5-7 minutes.
- Once the rice has absorbed all the liquid and is tender, remove it from the heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, then gently fold in the steamed broccoli and lemon juice.
- Serve warm, topped with grated Parmesan cheese if desired.
