Ingredients
- Brown rice - 1 cup
- Water - 2 cups
- Cherry tomatoes - 1/2 cup, halved
- Cucumber - 1/2 medium, diced
- Red bell pepper - 1/2 medium, diced
- Red onion - 1/4 medium, finely chopped
- Fresh parsley - 1/4 cup, chopped
- Feta cheese - 50 grams, crumbled
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the brown rice under cold water until the water runs clear.
- In a saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 25 minutes, or until the rice is tender and the water is absorbed.
- Once the rice is cooked, remove from heat and let it cool for about 5 minutes before fluffing with a fork.
- While the rice is cooling, prepare the vegetables by chopping the cherry tomatoes, cucumber, red bell pepper, and red onion.
- In a large bowl, combine the cooled rice, chopped vegetables, and fresh parsley. Mix well.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Drizzle the dressing over the rice salad and toss gently to combine.
- Top with crumbled feta cheese before serving.
