Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Cherry tomatoes - 1/2 cup, halved
  • Cucumber - 1/2 medium, diced
  • Red bell pepper - 1/2 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Fresh parsley - 1/4 cup, chopped
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 25 minutes, or until the rice is tender and the water is absorbed.
  3. Once the rice is cooked, remove from heat and let it cool for about 5 minutes before fluffing with a fork.
  4. While the rice is cooling, prepare the vegetables by chopping the cherry tomatoes, cucumber, red bell pepper, and red onion.
  5. In a large bowl, combine the cooled rice, chopped vegetables, and fresh parsley. Mix well.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  7. Drizzle the dressing over the rice salad and toss gently to combine.
  8. Top with crumbled feta cheese before serving.
