- Vegetable broth - 2 cups (480ml)
- Olive oil - 2 tablespoons (30ml)
- Onion, finely chopped - 1 small (75g)
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium (70g)
- Almonds, slivered - 1/4 cup (35g)
- Pistachios, shelled and chopped - 1/4 cup (35g)
- Cumin seeds - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon (15ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and diced carrot, and cook for another 2-3 minutes until the carrot starts to soften.
- Add the cumin seeds, salt, and black pepper to the pan. Cook for an additional minute to release the spices' aromas.
- Stir in the rinsed basmati rice, making sure it is well-coated with the oil and mixed with the vegetables.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
- Meanwhile, in a dry skillet over medium heat, toast the slivered almonds and chopped pistachios for about 3-4 minutes until golden and fragrant, stirring frequently.
- Once the rice is cooked, fluff it with a fork and gently fold in the toasted nuts, chopped parsley, and lemon juice.
