Ingredients

  • Cooked Jasmine Rice - 1 cup
  • Cooked Chicken Breast, shredded - 150 grams
  • Spinach, chopped - 1 cup
  • Red Bell Pepper, diced - 1/2 cup
  • Onion, finely chopped - 1/4 cup
  • Garlic, minced - 2 cloves
  • Cream Cheese - 100 grams
  • Shredded Cheddar Cheese - 1/2 cup
  • Chicken Broth - 1/2 cup
  • Olive Oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Dried Oregano - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium skillet, heat the olive oil over medium heat and add the onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the red bell pepper and spinach to the skillet, cooking until the spinach wilts, about 2-3 minutes.
  4. In a large mixing bowl, combine the cooked rice, shredded chicken, sautéed vegetables, cream cheese, chicken broth, salt, black pepper, paprika, and oregano. Mix until well combined.
  5. Transfer the mixture to a greased baking dish and spread it evenly. Top with shredded cheddar cheese.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  8. Allow to cool for a few minutes before serving.
