- Cooked Jasmine Rice - 1 cup
- Cooked Chicken Breast, shredded - 150 grams
- Spinach, chopped - 1 cup
- Red Bell Pepper, diced - 1/2 cup
- Onion, finely chopped - 1/4 cup
- Garlic, minced - 2 cloves
- Cream Cheese - 100 grams
- Shredded Cheddar Cheese - 1/2 cup
- Chicken Broth - 1/2 cup
- Olive Oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Dried Oregano - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a medium skillet, heat the olive oil over medium heat and add the onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the red bell pepper and spinach to the skillet, cooking until the spinach wilts, about 2-3 minutes.
- In a large mixing bowl, combine the cooked rice, shredded chicken, sautéed vegetables, cream cheese, chicken broth, salt, black pepper, paprika, and oregano. Mix until well combined.
- Transfer the mixture to a greased baking dish and spread it evenly. Top with shredded cheddar cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
- Allow to cool for a few minutes before serving.
