Ingredients

  • Long-grain white rice - 1 cup
  • Fresh spinach - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Vegetable broth - 2 cups
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Parmesan cheese (optional) - 2 tablespoons, grated

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  4. Stir in the rinsed rice, and toast it for 2 minutes, stirring frequently.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and liquid is absorbed.
  6. While the rice is cooking, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes.
  7. Season the spinach with salt, pepper, and lemon juice, then remove from heat.
  8. Once the rice is cooked, fluff it with a fork and gently fold in the sautéed spinach.
  9. Serve warm, topped with grated Parmesan cheese if desired.
