- Long-grain white rice - 1 cup
- Fresh spinach - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Vegetable broth - 2 cups
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Parmesan cheese (optional) - 2 tablespoons, grated
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in the rinsed rice, and toast it for 2 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and liquid is absorbed.
- While the rice is cooking, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes.
- Season the spinach with salt, pepper, and lemon juice, then remove from heat.
- Once the rice is cooked, fluff it with a fork and gently fold in the sautéed spinach.
- Serve warm, topped with grated Parmesan cheese if desired.
