Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Italian sausage - 200 grams, sliced
  • Bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice, reduce the heat to low, cover, and simmer for 25 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  4. Add the diced onion, bell pepper, and minced garlic to the skillet with the sausage. Sauté for an additional 5 minutes until the vegetables are soft.
  5. Stir in the paprika, black pepper, and salt, mixing well to combine all the flavors.
  6. Once the rice is cooked, fluff it with a fork and add it to the skillet with the sausage and vegetables. Stir to combine and heat through for about 2-3 minutes.
  7. Serve hot, garnished with chopped parsley.
