- Italian sausage - 200 grams, sliced
- Bell pepper - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice, reduce the heat to low, cover, and simmer for 25 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
- Add the diced onion, bell pepper, and minced garlic to the skillet with the sausage. Sauté for an additional 5 minutes until the vegetables are soft.
- Stir in the paprika, black pepper, and salt, mixing well to combine all the flavors.
- Once the rice is cooked, fluff it with a fork and add it to the skillet with the sausage and vegetables. Stir to combine and heat through for about 2-3 minutes.
- Serve hot, garnished with chopped parsley.
