  • Vegetable broth - 1 cup
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped green onions and minced garlic, and sauté until fragrant, about 2 minutes.
  2. Add the brown rice to the saucepan and stir to coat the rice in the oil and aromatics for about 1 minute.
  3. Pour in the coconut milk, vegetable broth, drained kidney beans, dried thyme, allspice, salt, and black pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and let it simmer for about 30 minutes, or until the rice is tender and the liquid is absorbed.
  5. Once cooked, remove from heat and let it sit for 5 minutes covered. Fluff the rice with a fork and stir in the lime juice before serving.
