- Vegetable broth - 1 cup
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Lime - 1, juiced
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped green onions and minced garlic, and sauté until fragrant, about 2 minutes.
- Add the brown rice to the saucepan and stir to coat the rice in the oil and aromatics for about 1 minute.
- Pour in the coconut milk, vegetable broth, drained kidney beans, dried thyme, allspice, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and let it simmer for about 30 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit for 5 minutes covered. Fluff the rice with a fork and stir in the lime juice before serving.
