- Green or brown lentils - 1/2 cup
- Vegetable broth - 2 cups
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the brown rice and lentils under cold water until the water runs clear.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic, cumin, turmeric, salt, and black pepper to the pan, and cook for another minute until fragrant.
- Stir in the rinsed lentils and brown rice, followed by the vegetable broth. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes before fluffing it with a fork.
- Serve warm, garnished with chopped fresh parsley.
