  • Green or brown lentils - 1/2 cup
  • Vegetable broth - 2 cups
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the brown rice and lentils under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic, cumin, turmeric, salt, and black pepper to the pan, and cook for another minute until fragrant.
  4. Stir in the rinsed lentils and brown rice, followed by the vegetable broth. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes before fluffing it with a fork.
  7. Serve warm, garnished with chopped fresh parsley.
