  • Brown rice - 1 cup
  • Black beans - 1 can (400g), rinsed and drained
  • Vegetable broth - 2 cups
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Lime - 1, cut into wedges (for serving)

Steps

  1. In a medium saucepan, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  2. Stir in the minced garlic, cumin, paprika, salt, and black pepper. Cook for another minute until fragrant.
  3. Add the brown rice to the pan and stir well to coat the rice with the spice mixture.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 25 minutes, or until rice is tender and liquid is absorbed.
  5. Once cooked, stir in the rinsed black beans and heat through for about 2-3 minutes.
  6. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork.
  7. Serve warm, garnished with chopped cilantro and lime wedges on the side.
