- Brown rice - 1 cup
- Black beans - 1 can (400g), rinsed and drained
- Vegetable broth - 2 cups
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - 2 tablespoons, chopped (for garnish)
- Lime - 1, cut into wedges (for serving)
Steps
- In a medium saucepan, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Stir in the minced garlic, cumin, paprika, salt, and black pepper. Cook for another minute until fragrant.
- Add the brown rice to the pan and stir well to coat the rice with the spice mixture.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 25 minutes, or until rice is tender and liquid is absorbed.
- Once cooked, stir in the rinsed black beans and heat through for about 2-3 minutes.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork.
- Serve warm, garnished with chopped cilantro and lime wedges on the side.
