Ingredients

  • quahog clams - 6 large, cleaned
  • gluten-free breadcrumbs - 1 cup
  • cooked chorizo sausage - 100 grams, crumbled
  • onion - 1 small, finely chopped
  • celery - 1 stalk, finely chopped
  • garlic - 2 cloves, minced
  • parsley - 2 tablespoons, chopped
  • olive oil - 2 tablespoons
  • lemon juice - 1 tablespoon
  • paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • water - 1 cup (for steaming clams)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a pot, add water and place the cleaned clams inside. Cover and steam for about 8-10 minutes until the clams open. Discard any that do not open.
  3. Once cooled, remove the clam meat from the shells and chop finely. Set aside the shells for stuffing.
  4. In a skillet, heat olive oil over medium heat. Add the chopped onion, celery, and garlic, sautéing until the vegetables are soft, about 5 minutes.
  5. Add the chopped clam meat and crumbled chorizo to the skillet, cooking for an additional 3-4 minutes.
  6. Stir in gluten-free breadcrumbs, parsley, lemon juice, paprika, salt, and pepper. Mix until well combined and remove from heat.
  7. Carefully stuff each clam shell with the mixture, pressing down lightly to pack it in.
  8. Place the stuffed clams on a baking sheet and bake for 15-20 minutes, or until the tops are golden brown.
  9. Remove from oven, let cool slightly, and serve warm.
