Ingredients

  • All-purpose flour - 200 grams
  • Eggs - 1 large
  • Ricotta cheese - 150 grams
  • Parmesan cheese - 30 grams, grated
  • Fresh basil - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Canned crushed tomatoes - 200 grams
  • Garlic - 1 clove, minced
  • Sugar - 1/2 teaspoon

Steps

  1. In a large bowl, combine the flour and salt. Make a well in the center, add the egg, and mix until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  3. In another bowl, mix ricotta cheese, grated Parmesan, chopped basil, salt, and black pepper until well combined.
  4. Roll out the pasta dough into thin sheets using a pasta machine or rolling pin. Cut into squares (about 10x10 cm).
  5. Place a teaspoon of the ricotta mixture in the center of each square. Fold the pasta over to create triangles and seal the edges with a fork.
  6. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  7. Add the crushed tomatoes and sugar to the skillet. Simmer for 10-15 minutes, stirring occasionally.
  8. While the sauce simmers, bring a pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes until they float to the surface.
  9. Drain the ravioli and add them to the tomato sauce. Toss gently to coat them in the sauce.
  10. Serve hot, garnished with additional grated Parmesan and fresh basil if desired.
