- All-purpose flour - 200 grams
- Eggs - 1 large
- Ricotta cheese - 150 grams
- Parmesan cheese - 30 grams, grated
- Fresh basil - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Canned crushed tomatoes - 200 grams
- Garlic - 1 clove, minced
- Sugar - 1/2 teaspoon
Steps
- In a large bowl, combine the flour and salt. Make a well in the center, add the egg, and mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- In another bowl, mix ricotta cheese, grated Parmesan, chopped basil, salt, and black pepper until well combined.
- Roll out the pasta dough into thin sheets using a pasta machine or rolling pin. Cut into squares (about 10x10 cm).
- Place a teaspoon of the ricotta mixture in the center of each square. Fold the pasta over to create triangles and seal the edges with a fork.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the crushed tomatoes and sugar to the skillet. Simmer for 10-15 minutes, stirring occasionally.
- While the sauce simmers, bring a pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes until they float to the surface.
- Drain the ravioli and add them to the tomato sauce. Toss gently to coat them in the sauce.
- Serve hot, garnished with additional grated Parmesan and fresh basil if desired.
