  • Zucchini - 1 medium, diced
  • Eggplant - 1 small, diced

  • Yellow onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Italian sausage (bulk, without casing) - 250 grams
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Remove the cooked sausage from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil.
  3. Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion becomes translucent.
  4. Add the diced zucchini, eggplant, and bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables start to soften.
  5. Stir in the diced tomato, oregano, thyme, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes break down slightly.
  6. Return the cooked sausage to the skillet and mix well. Let everything simmer together for another 5-10 minutes.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil.
