- Olive oil - 2 tablespoons
- Italian sausage (bulk, without casing) - 250 grams
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Remove the cooked sausage from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil.
- Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion becomes translucent.
- Add the diced zucchini, eggplant, and bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables start to soften.
- Stir in the diced tomato, oregano, thyme, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes break down slightly.
- Return the cooked sausage to the skillet and mix well. Let everything simmer together for another 5-10 minutes.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil.
