  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain bread - 4 slices
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the diced zucchini, eggplant, red bell pepper, onion, garlic, and cherry tomatoes.
  3. Drizzle with olive oil, balsamic vinegar, oregano, salt, and black pepper. Toss to coat evenly.
