Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the diced zucchini, eggplant, red bell pepper, onion, garlic, and cherry tomatoes.
- Drizzle with olive oil, balsamic vinegar, oregano, salt, and black pepper. Toss to coat evenly.
