- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 1/4 cup, chopped
- Balsamic vinegar - 1 tablespoon
- Ciabatta bread - 2 rolls
- Fresh mozzarella cheese - 100 grams, sliced
- Arugula - 1 cup
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the zucchini, eggplant, red bell pepper, onion, and garlic.
- Drizzle with olive oil, sprinkle with thyme, salt, and pepper, and toss to coat.
- Spread the vegetables on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized.
- Remove the vegetables from the oven and drizzle with balsamic vinegar and add the chopped basil; toss gently.
- While the vegetables are roasting, cut the ciabatta rolls in half and lightly toast them.
- Layer the roasted vegetable mixture on the bottom half of each roll.
- Top with slices of fresh mozzarella and a handful of arugula.
- Cover with the top half of the rolls and press down gently.
