  • Zucchini - 1 medium, sliced
  • Eggplant - 1 small, diced
  • Red bell pepper - 1, chopped
  • Yellow onion - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 1/4 cup, chopped
  • Balsamic vinegar - 1 tablespoon
  • Ciabatta bread - 2 rolls
  • Fresh mozzarella cheese - 100 grams, sliced
  • Arugula - 1 cup

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the zucchini, eggplant, red bell pepper, onion, and garlic.
  3. Drizzle with olive oil, sprinkle with thyme, salt, and pepper, and toss to coat.
  4. Spread the vegetables on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized.
  5. Remove the vegetables from the oven and drizzle with balsamic vinegar and add the chopped basil; toss gently.
  6. While the vegetables are roasting, cut the ciabatta rolls in half and lightly toast them.
  7. Layer the roasted vegetable mixture on the bottom half of each roll.
  8. Top with slices of fresh mozzarella and a handful of arugula.
  9. Cover with the top half of the rolls and press down gently.
