  • Whole wheat penne pasta - 150 grams
  • Zucchini - 1 medium, diced
  • Eggplant - 100 grams, diced
  • Red bell pepper - 1 medium, diced
  • Yellow onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 400 grams
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the whole wheat penne pasta in a pot of boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  4. Add diced zucchini, eggplant, and red bell pepper to the skillet, cooking for another 5-7 minutes until the vegetables are tender.
  5. Stir in the canned diced tomatoes, dried oregano, dried basil, salt, and black pepper. Simmer for 5 minutes to meld the flavors.
  6. In a large mixing bowl, combine the cooked penne pasta with the ratatouille mixture, mixing well to combine.
  7. Transfer the pasta mixture into a greased baking dish. Sprinkle the grated Parmesan cheese evenly over the top.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh basil before serving.
