- Whole wheat penne pasta - 150 grams
- Zucchini - 1 medium, diced
- Eggplant - 100 grams, diced
- Red bell pepper - 1 medium, diced
- Yellow onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Canned diced tomatoes - 400 grams
- Olive oil - 1 tablespoon
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated
- Fresh basil - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cook the whole wheat penne pasta in a pot of boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add diced zucchini, eggplant, and red bell pepper to the skillet, cooking for another 5-7 minutes until the vegetables are tender.
- Stir in the canned diced tomatoes, dried oregano, dried basil, salt, and black pepper. Simmer for 5 minutes to meld the flavors.
- In a large mixing bowl, combine the cooked penne pasta with the ratatouille mixture, mixing well to combine.
- Transfer the pasta mixture into a greased baking dish. Sprinkle the grated Parmesan cheese evenly over the top.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil before serving.
