  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Fresh basil - a handful
  • Salt - to taste
  • Black pepper - to taste
  • Balsamic vinegar - 1 teaspoon
  • Whole grain bread - 4 slices

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Dice the eggplant, zucchini, bell pepper, and onion into small, uniform pieces. Mince the garlic.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent.
  4. Add the garlic and cook for an additional minute until fragrant.
  5. Stir in the eggplant and bell pepper, cooking for about 5 minutes until they start to soften.
  6. Add the zucchini, thyme, salt, and pepper. Continue to cook for another 5-7 minutes until all vegetables are tender.
  7. Drizzle the balsamic vinegar over the vegetables and stir to combine. Remove from heat and fold in fresh basil.
  8. While the ratatouille is cooking, place the slices of whole grain bread on a baking sheet and toast in the oven for about 5-7 minutes until golden brown.
  9. To serve, spoon the ratatouille mixture generously over the toasted bread. Garnish with additional basil if desired.
