Ingredients

  • All-purpose flour - 125 grams
  • Unsalted butter (cold, cubed) - 60 grams
  • Cream cheese (cold, cubed) - 60 grams
  • Granulated sugar - 20 grams
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Raspberry preserves - 80 grams
  • Chopped walnuts (optional) - 30 grams
  • Powdered sugar (for dusting) - 1 tablespoon

Steps

  1. In a mixing bowl, combine the flour and salt. Add the cold butter and cream cheese, then mix until the mixture resembles coarse crumbs.
  2. Stir in the granulated sugar and vanilla extract until the dough comes together. Divide the dough into two equal portions, shape into disks, and wrap in plastic wrap. Refrigerate for at least 30 minutes.
  3. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  4. On a floured surface, roll out one disk of dough into a circle about 25 cm in diameter. Spread half of the raspberry preserves evenly over the dough, leaving a small border around the edges.
  5. If using, sprinkle half of the chopped walnuts over the raspberry preserves.
  6. Cut the dough circle into 8 equal wedges, like a pizza. Starting from the wider end of each wedge, roll each piece up towards the tip to form a crescent shape.
  7. Place the rugelach on the prepared baking sheet, spacing them about 2.5 cm apart. Repeat with the second disk of dough.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  9. Allow the rugelach to cool slightly before dusting with powdered sugar and serving.
