Ingredients

  • Raspberries - 200 grams
  • Fresh lemon juice - 60 ml
  • Granulated sugar - 100 grams
  • Water - 240 ml
  • Lemon zest - 1 teaspoon
  • Pinch of salt

Steps

  1. In a small saucepan, combine 240 ml of water and 100 grams of granulated sugar over medium heat. Stir until the sugar is completely dissolved.
  2. Remove the saucepan from heat and let the syrup cool to room temperature.
  3. In a blender, combine the raspberries, fresh lemon juice, lemon zest, and a pinch of salt. Blend until smooth.
  4. Strain the raspberry mixture through a fine mesh sieve into a bowl to remove the seeds, pressing down to extract as much liquid as possible.
  5. Mix the cooled sugar syrup into the strained raspberry mixture until well combined.
  6. Pour the mixture into a shallow dish and place it in the freezer.
  7. Every 30 minutes, stir the sorbet with a fork to break up any ice crystals for about 3 hours, or until the sorbet is firm and fluffy.
  8. Once ready, scoop the sorbet into bowls and serve immediately.
