  • Cornstarch - 15 grams
  • Salt - 1/4 teaspoon
  • Eggs - 2 large
  • Fresh lemon juice - 50 milliliters
  • Zest of 1 lemon
  • Fresh raspberries - 100 grams
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 175°C (350°F) and line a small baking dish (approximately 20x20 cm) with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the flour, cornstarch, and salt, mixing until just combined to form the crust dough.
  4. Press the dough evenly into the bottom of the prepared baking dish and bake for 15 minutes until lightly golden.
  5. While the crust is baking, prepare the filling by whisking together the eggs, granulated sugar, lemon juice, lemon zest, and fresh raspberries in a separate bowl until well combined.
  6. After the crust has baked for 15 minutes, pour the raspberry-lemon filling over the warm crust.
  7. Return the dish to the oven and bake for an additional 20 minutes, or until the filling is set and slightly firm to the touch.
  8. Remove from the oven and let cool completely at room temperature, then refrigerate for at least 2 hours to set.
