- All-purpose flour - 100 grams
- Unsweetened cocoa powder - 25 grams
- Powdered sugar - 30 grams

- Unsalted butter - 50 grams, chilled and diced
- Ice water - 2 tablespoons
- Dark chocolate (70% cocoa) - 100 grams, chopped
- Heavy cream - 100 ml
- Fresh raspberries - 100 grams
- Granulated sugar - 1 tablespoon
Steps
- In a bowl, mix together the flour, cocoa powder, powdered sugar, and salt.
- Add the diced butter and rub it into the dry ingredients until it resembles coarse crumbs.
- Add ice water a little at a time, mixing until the dough comes together. Form into a disc, wrap in plastic wrap, and chill for 30 minutes.
- Preheat the oven to 175°C (350°F). Roll out the chilled dough on a floured surface to fit a 20 cm tart pan. Press the dough into the pan and trim the edges.
- Prick the bottom of the tart shell with a fork, line it with parchment paper, and fill with baking weights or beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 5 minutes. Let it cool.
- In a saucepan, heat the heavy cream until just simmering, then pour it over the chopped dark chocolate in a bowl. Let it sit for a few minutes, then stir until smooth and glossy.
- Pour the chocolate ganache into the cooled tart shell and spread it evenly.
- In a small bowl, toss the fresh raspberries with granulated sugar and let them sit for 10 minutes.
- Once the ganache has set slightly, arrange the sugared raspberries on top. Chill the tart in the refrigerator for at least 30 minutes before serving.
