Ingredients

  • All-purpose flour - 100 grams
  • Unsweetened cocoa powder - 25 grams
  • Powdered sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Unsalted butter - 50 grams, chilled and diced
  • Ice water - 2 tablespoons
  • Dark chocolate (70% cocoa) - 100 grams, chopped
  • Heavy cream - 100 ml
  • Fresh raspberries - 100 grams
  • Granulated sugar - 1 tablespoon

Steps

  1. In a bowl, mix together the flour, cocoa powder, powdered sugar, and salt.
  2. Add the diced butter and rub it into the dry ingredients until it resembles coarse crumbs.
  3. Add ice water a little at a time, mixing until the dough comes together. Form into a disc, wrap in plastic wrap, and chill for 30 minutes.
  4. Preheat the oven to 175°C (350°F). Roll out the chilled dough on a floured surface to fit a 20 cm tart pan. Press the dough into the pan and trim the edges.
  5. Prick the bottom of the tart shell with a fork, line it with parchment paper, and fill with baking weights or beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 5 minutes. Let it cool.
  6. In a saucepan, heat the heavy cream until just simmering, then pour it over the chopped dark chocolate in a bowl. Let it sit for a few minutes, then stir until smooth and glossy.
  7. Pour the chocolate ganache into the cooled tart shell and spread it evenly.
  8. In a small bowl, toss the fresh raspberries with granulated sugar and let them sit for 10 minutes.
  9. Once the ganache has set slightly, arrange the sugared raspberries on top. Chill the tart in the refrigerator for at least 30 minutes before serving.
