  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Avocado - 1 medium, sliced (for serving)

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced tomatoes, cumin, chili powder, salt, and black pepper. Simmer for about 10 minutes, allowing the flavors to meld.
  4. Make four small wells in the tomato mixture and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
  5. Remove from heat and garnish with chopped cilantro. Serve hot with sliced avocado on the side.
