- Chili powder - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Avocado - 1 medium, sliced (for serving)
Steps
- In a skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, and sauté until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced tomatoes, cumin, chili powder, salt, and black pepper. Simmer for about 10 minutes, allowing the flavors to meld.
- Make four small wells in the tomato mixture and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
- Remove from heat and garnish with chopped cilantro. Serve hot with sliced avocado on the side.
