Ingredients

  • Chicken breast - 300 grams
  • Ranch seasoning - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Bell pepper - 1 medium, cut into 1-inch pieces
  • Zucchini - 1 medium, sliced into rounds
  • Cherry tomatoes - 100 grams
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Cut the chicken breast into 2.5 cm cubes and place them in a bowl.
  2. In a separate bowl, mix ranch seasoning, olive oil, lemon juice, salt, and black pepper.
  3. Pour the marinade over the chicken cubes and mix well to ensure all pieces are coated. Let it marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare the vegetables: cut the bell pepper into 1-inch pieces, slice the zucchini, and wash the cherry tomatoes.
  5. Soak wooden skewers in water for about 10 minutes to prevent burning on the grill.
  6. Once marinated, thread the chicken, bell pepper, zucchini, and cherry tomatoes onto the soaked skewers, alternating between the ingredients.
  7. Preheat the grill or grill pan over medium-high heat.
  8. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  9. Remove from grill and let rest for a couple of minutes before serving.
