- Chicken breast - 300 grams
- Ranch seasoning - 2 tablespoons
- Olive oil - 1 tablespoon
- Bell pepper - 1 medium, cut into 1-inch pieces
- Zucchini - 1 medium, sliced into rounds
- Cherry tomatoes - 100 grams
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Cut the chicken breast into 2.5 cm cubes and place them in a bowl.
- In a separate bowl, mix ranch seasoning, olive oil, lemon juice, salt, and black pepper.
- Pour the marinade over the chicken cubes and mix well to ensure all pieces are coated. Let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables: cut the bell pepper into 1-inch pieces, slice the zucchini, and wash the cherry tomatoes.
- Soak wooden skewers in water for about 10 minutes to prevent burning on the grill.
- Once marinated, thread the chicken, bell pepper, zucchini, and cherry tomatoes onto the soaked skewers, alternating between the ingredients.
- Preheat the grill or grill pan over medium-high heat.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from grill and let rest for a couple of minutes before serving.
