  • whole wheat flour - 100g
  • all-purpose flour - 50g
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • salt - 1/4 tsp
  • cinnamon - 1/2 tsp
  • brown sugar - 50g
  • milk - 150ml
  • vegetable oil - 30ml
  • egg - 1 large
  • raisin bran cereal - 100g
  • raisins - 50g

Steps

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the brown sugar, milk, vegetable oil, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the raisin bran cereal and raisins until evenly distributed.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
