- Rabbit meat - 250 grams, ground
- Garlic - 2 cloves, minced
- Shallot - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Egg - 1 large, beaten
- Almond flour - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Romaine lettuce - 4 leaves
- Avocado - 1 medium, sliced
- Tomato - 1 medium, sliced
- Red onion - 1/2 small, thinly sliced
Steps
- In a mixing bowl, combine the ground rabbit meat, minced garlic, chopped shallot, parsley, thyme, beaten egg, almond flour, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat olive oil in a skillet over medium heat. Once hot, add the rabbit patties and cook for about 4-5 minutes on each side until golden brown and cooked through.
- While the patties are cooking, prepare the lettuce leaves by washing and drying them.
- Once cooked, assemble the burgers by placing each patty on a lettuce leaf, adding slices of avocado, tomato, and red onion on top.
- Wrap the lettuce around the fillings, securing with a toothpick if necessary, and serve immediately.
