Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 10 grams, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Green onion - 2, thinly sliced
  • Lemon juice - 30 ml
  • Olive oil - 15 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and 250 ml of water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
  4. Remove the pan from heat and let it sit, covered, for an additional 5 minutes. Fluff the quinoa with a fork and allow it to cool.
  5. In a large bowl, combine the chopped parsley, mint, diced tomato, diced cucumber, and sliced green onion.
  6. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  7. Once the quinoa has cooled, add it to the vegetable and herb mixture.
  8. Pour the dressing over the salad and toss everything gently to combine thoroughly.
  9. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
