- Water - 2 cups
- Cucumber - 1 medium, diced
- Cherry tomatoes - 1 cup, halved
- Red bell pepper - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 1/4 cup, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps

- While the quinoa is cooking, prepare the vegetables: dice the cucumber, red bell pepper, and red onion, and halve the cherry tomatoes.
- In a large bowl, combine the cooked quinoa, diced cucumber, cherry tomatoes, red bell pepper, red onion, crumbled feta cheese, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing.
- Pour the dressing over the quinoa salad and toss gently to combine all the ingredients.
- Taste and adjust seasoning if necessary before serving.
