- Quinoa - 1 cup
- Vegetable broth - 2 cups
- Olive oil - 2 tablespoons
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Frozen peas - 1/2 cup
- Fresh parsley - 1/4 cup, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Rinse the quinoa under cold water in a fine mesh strainer until the water runs clear.
- In a medium saucepan, heat olive oil over medium heat. Add the diced red onion and sauté for about 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add the diced carrot and bell pepper to the saucepan, and sauté for another 5 minutes until they begin to soften.
- Pour in the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.
- Remove the saucepan from heat and stir in the frozen peas, chopped parsley, salt, black pepper, and lemon juice. Cover and let sit for 5 minutes.
- Fluff the quinoa with a fork and serve warm.
