Ingredients

  • Quinoa - 1 cup
  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Frozen peas - 1/2 cup
  • Fresh parsley - 1/4 cup, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer until the water runs clear.
  2. In a medium saucepan, heat olive oil over medium heat. Add the diced red onion and sauté for about 3-4 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add the diced carrot and bell pepper to the saucepan, and sauté for another 5 minutes until they begin to soften.
  5. Pour in the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.
  6. Remove the saucepan from heat and stir in the frozen peas, chopped parsley, salt, black pepper, and lemon juice. Cover and let sit for 5 minutes.
  7. Fluff the quinoa with a fork and serve warm.
