  • Strawberries - 1/2 cup, diced
  • Blueberries - 1/2 cup
  • Kiwi - 1, peeled and diced
  • Mango - 1/2, diced
  • Honey - 1 tablespoon
  • Fresh mint leaves - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove its natural bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water; bring to a boil over medium heat.
  3. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until quinoa is cooked and water is absorbed.
  4. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork and allow to cool.
  5. In a large mixing bowl, combine the diced strawberries, blueberries, kiwi, and mango.
  6. Add the cooled quinoa to the bowl with the fruits.
