- Tomato sauce - 1/2 cup
- Mozzarella cheese - 1/2 cup, shredded
- Bell pepper - 1/2 cup, diced
- Red onion - 1/4 cup, thinly sliced

- Oregano - 1 teaspoon
Steps
- Preheat the oven to 220°C (425°F).
- Rinse the quinoa under cold water and combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed.
- Once cooked, let the quinoa cool slightly, then transfer it to a large mixing bowl.
- Add olive oil, garlic powder, onion powder, salt, black pepper, and the egg to the quinoa. Mix well until combined.
- Line a baking sheet with parchment paper and spread the quinoa mixture into a round pizza shape, about 1 cm thick. Bake in the preheated oven for 15 minutes until the edges are golden brown.
- Remove the crust from the oven and spread the tomato sauce evenly over the surface.
- Sprinkle the mozzarella cheese on top, followed by the diced bell pepper, sliced red onion, and fresh spinach. Add oregano for extra flavor.
- Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
- Allow the pizza to cool for a few minutes before slicing. Serve warm.
