  • Quinoa - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon

  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Tomato sauce - 1/2 cup
  • Mozzarella cheese - 1/2 cup, shredded
  • Bell pepper - 1/2 cup, diced
  • Red onion - 1/4 cup, thinly sliced
  • Spinach - 1 cup, fresh
  • Oregano - 1 teaspoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Rinse the quinoa under cold water and combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed.
  3. Once cooked, let the quinoa cool slightly, then transfer it to a large mixing bowl.
  4. Add olive oil, garlic powder, onion powder, salt, black pepper, and the egg to the quinoa. Mix well until combined.
  5. Line a baking sheet with parchment paper and spread the quinoa mixture into a round pizza shape, about 1 cm thick. Bake in the preheated oven for 15 minutes until the edges are golden brown.
  6. Remove the crust from the oven and spread the tomato sauce evenly over the surface.
  7. Sprinkle the mozzarella cheese on top, followed by the diced bell pepper, sliced red onion, and fresh spinach. Add oregano for extra flavor.
  8. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  9. Allow the pizza to cool for a few minutes before slicing. Serve warm.
