Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Avocado - 1 medium, diced
  • Fresh parsley - 1/4 cup, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove its natural bitterness.
  2. In a medium pot, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. Remove from heat and let quinoa sit, covered, for 5 minutes. Fluff with a fork.
