- Cherry tomatoes (halved) - 1 cup
- Red bell pepper (diced) - 1/2 cup
- Corn (canned or frozen, thawed) - 1/2 cup
- Red onion (finely chopped) - 1/4 cup
- Cilantro (chopped) - 1/4 cup
- Lime juice - 3 tablespoons
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the quinoa under cold water, then combine it with 2 cups of water in a saucepan and bring to a boil.
- Reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed and the quinoa is fluffy.
- Remove from heat and let it sit covered for 5 minutes, then fluff with a fork and let it cool.
