  • Quinoa - 1 cup
  • Black beans (canned, rinsed and drained) - 1 cup
  • Cherry tomatoes (halved) - 1 cup
  • Red bell pepper (diced) - 1/2 cup
  • Corn (canned or frozen, thawed) - 1/2 cup
  • Red onion (finely chopped) - 1/4 cup
  • Cilantro (chopped) - 1/4 cup
  • Lime juice - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water, then combine it with 2 cups of water in a saucepan and bring to a boil.
  2. Reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed and the quinoa is fluffy.
  3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork and let it cool.
  4. In a large bowl, combine the black beans, cherry tomatoes, red bell pepper, corn, red onion, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper to create the dressing.
