Ingredients

  • Water - 2 cups (480ml)
  • Fresh spinach - 2 cups (60g), chopped
  • Cherry tomatoes - 1 cup (150g), halved
  • Cucumber - 1 medium (150g), diced
  • Feta cheese - 100g, crumbled
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon (2g)
  • Black pepper - 1/4 teaspoon (1g)

Steps

  1. Rinse the quinoa under cold water in a fine sieve to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
  4. While the quinoa is cooking, prepare the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and black pepper in a small bowl.
  5. In a large bowl, combine the chopped spinach, cherry tomatoes, cucumber, and crumbled feta cheese.
