- Cherry tomatoes - 1 cup (150g), halved
- Cucumber - 1 medium (150g), diced
- Feta cheese - 100g, crumbled
- Olive oil - 2 tablespoons (30ml)
- Lemon juice - 1 tablespoon (15ml)
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon (2g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Rinse the quinoa under cold water in a fine sieve to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
