Ingredients

  • all-purpose flour - 1 cup (125g)
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • pumpkin puree - 1/2 cup (120g)
  • milk - 3/4 cup (180ml)
  • egg - 1 large
  • brown sugar - 2 tbsp (25g)
  • pumpkin pie spice - 1 tsp
  • vanilla extract - 1 tsp
  • salt - 1/4 tsp
  • butter - 2 tbsp (30g), melted

Steps

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, brown sugar, pumpkin pie spice, and salt.
  2. In another bowl, whisk together the pumpkin puree, milk, egg, vanilla extract, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
  7. Serve warm with maple syrup and a sprinkle of additional pumpkin pie spice, if desired.
