Ingredients
- all-purpose flour - 1 cup (125g)
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- pumpkin puree - 1/2 cup (120g)
- milk - 3/4 cup (180ml)
- egg - 1 large
- brown sugar - 2 tbsp (25g)
- pumpkin pie spice - 1 tsp
- vanilla extract - 1 tsp
- salt - 1/4 tsp
- butter - 2 tbsp (30g), melted
Steps
- In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, brown sugar, pumpkin pie spice, and salt.
- In another bowl, whisk together the pumpkin puree, milk, egg, vanilla extract, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
- Serve warm with maple syrup and a sprinkle of additional pumpkin pie spice, if desired.
