  • brown sugar - 80 grams
  • granulated sugar - 30 grams
  • pumpkin puree - 60 grams
  • vanilla extract - 1 teaspoon
  • espresso powder - 1 teaspoon
  • chocolate chips - 40 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the pumpkin puree, vanilla extract, and espresso powder to the butter and sugar mixture, and mix until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
