Steps

  1. Preheat the oven to 180°C (350°F) and grease two small cake pans (about 4-inch diameter).
  2. In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.
  3. In another bowl, whisk together the pumpkin puree, vegetable oil, milk, vanilla extract, and brewed coffee until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared cake pans.
