- Unsalted butter - 50 grams, softened
- Brown sugar - 50 grams
- Granulated sugar - 25 grams
- Pumpkin puree - 75 grams
- Vanilla extract - 1/2 teaspoon
- Egg - 1 large
- Chopped walnuts - 30 grams (optional)
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the pumpkin puree, vanilla extract, and egg to the butter mixture, and mix until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, fold in the chopped walnuts.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 5 cm apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
