Ingredients

  • Coconut oil - 1 tablespoon

  • Sea salt - 1/4 teaspoon
  • Cinnamon - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, combine the maple syrup, coconut oil, vanilla extract, sea salt, and cinnamon. Stir until the mixture is well combined and begins to simmer.
  3. Add the pumpkin seeds to the saucepan and stir to coat them evenly with the syrup mixture.
  4. Cook for an additional 2-3 minutes, stirring frequently, until the seeds are slightly toasted and the mixture thickens.
