Steps
- Preheat the oven to 180°C (350°F) and line a 23x33 cm (9x13 inch) baking pan with parchment paper.
- In a mixing bowl, whisk together the pumpkin puree, granulated sugar, and eggs until well combined.
- In another bowl, sift together the flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the cream cheese filling by mixing the softened cream cheese, butter, powdered sugar, and vanilla extract in a bowl until smooth.
- Once the cake is done, remove it from the oven and let it cool in the pan for about 5 minutes.
- Dust a clean kitchen towel with powdered sugar, then carefully invert the cake onto the towel, peeling off the parchment paper.
- Starting from one end, roll the cake up with the towel inside, creating a log shape. Let it cool completely in this rolled position.
- Once cooled, unroll the cake and spread the cream cheese filling evenly over the surface.
- Roll the cake back up without the towel, wrap it in plastic wrap, and refrigerate for at least 1 hour before slicing.
