Ingredients

  • Pumpkin puree - 100 grams
  • Rolled oats - 80 grams
  • Protein powder (vanilla flavor) - 30 grams
  • Almond butter - 30 grams
  • Honey or maple syrup - 20 grams
  • Cinnamon - 1 teaspoon
  • Nutmeg - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Chopped walnuts (optional) - 20 grams

Steps

  1. Preheat your oven to 180°C (350°F) and line a small baking dish with parchment paper.
  2. In a mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla protein powder until smooth.
  3. In a separate bowl, mix the rolled oats, cinnamon, nutmeg, baking powder, and salt.
  4. Gradually combine the dry ingredients with the wet mixture, stirring until well incorporated. If desired, fold in the chopped walnuts.
  5. Pour the mixture into the prepared baking dish, spreading it evenly.
