- Pumpkin puree - 100 grams
- Rolled oats - 80 grams
- Protein powder (vanilla flavor) - 30 grams
- Almond butter - 30 grams
- Honey or maple syrup - 20 grams
- Cinnamon - 1 teaspoon
- Nutmeg - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Chopped walnuts (optional) - 20 grams
Steps
- Preheat your oven to 180°C (350°F) and line a small baking dish with parchment paper.
- In a mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla protein powder until smooth.
- In a separate bowl, mix the rolled oats, cinnamon, nutmeg, baking powder, and salt.
- Gradually combine the dry ingredients with the wet mixture, stirring until well incorporated. If desired, fold in the chopped walnuts.
- Pour the mixture into the prepared baking dish, spreading it evenly.
