  • Brown sugar - 30 grams
  • Baking powder - 1 teaspoon

  • Ground cinnamon - 1/2 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Pumpkin puree - 100 grams
  • Vegetable oil - 30 ml
  • Egg - 1 large
  • Vanilla extract - 1/2 teaspoon
  • Chopped walnuts - 30 grams (optional)

Steps

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, vegetable oil, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. If desired, fold in the chopped walnuts.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
