- Granulated sugar - 50 grams
- Brown sugar - 30 grams
- Baking powder - 1 teaspoon
- Baking soda - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Pumpkin puree - 100 grams
- Vegetable oil - 30 ml
- Egg - 1 large
- Vanilla extract - 1/2 teaspoon
- Chopped walnuts - 30 grams (optional)
Steps
- Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the pumpkin puree, vegetable oil, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. If desired, fold in the chopped walnuts.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
