Ingredients

  • Pumpkin - 400 grams (peeled and cubed)
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves (minced)
  • Ground cinnamon - 1/2 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon (chopped, for garnish)

Steps

  1. In a large pot, bring water to a boil and add the cubed pumpkin. Cook for about 15 minutes or until the pumpkin is tender.
  2. Drain the pumpkin and return it to the pot. Add the coconut milk, olive oil, minced garlic, cinnamon, nutmeg, salt, and black pepper.
  3. Using a potato masher or an immersion blender, mash the pumpkin mixture until smooth and creamy.
  4. Taste and adjust seasoning if needed, then transfer to a serving bowl.
